There is something about Summer that just makes me want pickles. So crisp and refreshing. My new favorite is from the Angela’s Pepper-Pickled Foods shop at Blue Moon. Angela has introduced a new kind of pickle and I’m hooked. It’s made with the West Indian Gherkin. I had never seen such a thing when she brought them in. I almost thought I was seeing pickled eggs but I knew she would never go there. This picture gives you an idea of what a crazy little cucumber they are.

While these pickled treats might sound a little weird at first, Angela’s customers will tell you they are delicious! People actually come to Blue Moon just to buy her jars of goodness!

Here are a few yummy ways to enjoy her products…

Okra

*Chop it up and add it to chicken or tuna salad
*Spice up your favorite Bloody Mary or martini recipe
*Add it to a veggie tray at your next shindig
*Put it in a “grown up” grilled cheese sandwich

Cucumbers

*Add it to your potato salad recipe
*Put it on your favorite sandwich
*Mix it with diced tomatoes and onions to make a fresh summer time salad

Collards

*Chop them and mix them with cream cheese, diced onions, and garlic and chill. Makes an amazing dip!
*Kick up your hummus by mixing collards in
*For a neat twist try them on a good old-fashioned salad
